½ cup fresh orange juice
2 tsp finely grated orange zest
½ cup Orange Balsamic Dressing
½ tsp salt
½ tsp ground black pepper
½ tsp cinnamon
½ tsp nutmeg
3 lbs chicken pieces
⅓ cup honey
Directions1. Whisk together orange juice, orange zest, Orange Balsamic Dressing, salt, pepper, cinnamon and nutmeg. Pour over chicken in a Ziploc bag and squeeze out as much air as possible. Place in the refrigerator and let sit for 1-2 hours.
2. Preheat oven to 375°F.
3. Place marinated chicken pieces, skin side up, in a roasting pan. Put leftover marinade to the side. Bake uncovered for 50-60 minutes, depending on their size.
4. In a small saucepan, combine the reserved marinade and honey and simmer until glaze is reduced by half and has thickened.
5. After 25 minutes of roasting time, brush the chicken pieces with glaze every 10 minutes until chicken is fully cooked. Any leftover glaze can be served over the chicken or accompany a rice side dish.
