1 tbsp extra virgin olive oil
1 cup finely diced yellow onion
2 cloves garlic
1 lb boneless skinless chicken breast
Salt and pepper to taste
1 cup white rice
1 cup Original Swiss Dressing
2½ cups low-sodium chicken broth
2 cups broccoli florets
1 cup shredded cheddar cheese
¼ cup Panko bread crumbs
Directions1. Heat oil in a large oven-safe skillet on medium-high heat. Add onion and stir until soft. Add garlic and cook until fragrant. Add chicken and season with salt and pepper. Cook, stirring occasionally until golden.
2. Stir in rice, Original Swiss Dressing and 1 cup of broth. Bring to a simmer and cook until rice is cooked. Add remaining 1½ cups broth, broccoli and cheese. Cook until broccoli is tender and cheese is melted.
3. Turn on broiler. Sprinkle chicken mixture with bread crumbs and season with salt and pepper. Broil until golden and crispy.
