2 tbsp olive oil
1 onion finely chopped
3 garlic cloves, chopped
2 tbsp unbleached all-purpose flour
2 cups milk
2/3 cup grated Parmesan
1/4 cup Lemon Pepper Dressing
500 g store-bought gnocchi
Salt and pepper to taste
1. In a large, deep skillet over medium heat, add the oil, cook the onion and garlic for 5 minutes. Add the flour and cook for another 1 minute while stirring.
2. Whisk in the milk. Bring to a boil.
3. Add the zucchini and gnocchi. Simmer gently for 4 minutes or until the sauce thickens Add the Parmesan and dressing. Season with salt and pepper. Mix well.
