5 cups cheese tortellini
1 lb asparagus
1½ cups halved cherry tomatoes
1 cup arugula
2 grated carrots
½ cup grated parmesan
¼ cup finely chopped fresh parsley
1 tsp of salt
¾ tsp of black pepper
½ cup Lemon Pepper Dressing
Directions1. Cook the tortellini according to package instructions.
2. Cut off the ends of the asparagus stems and peel if necessary. Cut asparagus into 1” pieces.
3. In a casserole dish, bring 4 cups of water to a boil and cook the asparagus for 2-4 minutes. Drain and set aside in a bowl of ice water (this will stop the cooking process and maintain the vegetable’s beautiful green colour).
4. In a salad bowl, combine cooked tortellini, asparagus, tomatoes, arugula, carrots, parmesan and parsley.
5. Mix in salt, pepper and Lemon Pepper Dressing and serve immediately.
